Caffeine-Free Coffee-Flavored Donuts

Ingredients

Ingredients for the Donuts:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup plant-based milk (such as almond or soy milk)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons The neat Egg (mixed with 4 tablespoons water, according to package instructions)
  • Oil for frying

 

Ingredients for the Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon Kaffree Roma
  • 2 tablespoons hot water
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt (optional, to balance sweetness)

Directions

To make the donuts:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, mix together the plant-based milk, apple cider vinegar, vegetable oil, vanilla extract, and prepared neat Egg mixture until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over mix; the dough should be thick and slightly sticky.
  4. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Roll out the dough to about 1/2 inch thickness.
  5. Use a donut cutter or two differently sized round cookie cutters to cut out donuts and donut holes from the dough. Gather and re-roll any scraps of dough as needed.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the donuts to the hot oil, frying a few at a time, making sure not to overcrowd the pan. Fry for 1-2 minutes on each side, or until golden brown and cooked through.
  7. Remove the donuts from the oil using a slotted spoon and place them on a wire rack lined with paper towels to drain and cool.
  8. In a small bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until smooth to make the glaze.
  9. Dip each cooled donut into the glaze, coating it completely. Place the glazed donuts back on the wire rack to allow the glaze to set.

To make the glaze:

  1. Dissolve Kaffree Roma: In a small bowl, mix the Kaffree Roma powder with the hot water until fully dissolved.
  2. Mix the Glaze: In a medium-sized bowl, sift the powdered sugar to remove any lumps. Gradually add the Kaffree Roma mixture to the powdered sugar, whisking until smooth.
  3. Add Flavoring: Stir in the vanilla extract and a pinch of salt, if using, to enhance the flavor of the glaze.
  4. Adjust Consistency: If the glaze is too thick, add a few drops of water until you reach your desired consistency. If it’s too thin, add a bit more powdered sugar.
  5. Glaze the Donuts: Once your donuts have cooled, dip the tops of each donut into the glaze.
  6. Allow the excess to drip off before placing them on a wire rack to set.
