Ingredients

For the cookies:

  • 1 cup all-purpose flour
  • 1/2 cup Kaffree Roma powder
  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

For the frosting drizzle:

  • 1/2 cup powdered sugar
  • 2 tbsp Kaffree Roma powder
  • 2 tbsp almond milk (or any other plant-based milk)
  • 1/2 tsp vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized mixing bowl, sift together the flour, Kaffree Roma powder, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened vegan butter and brown sugar until creamy and well combined. Add in the maple syrup and vanilla extract and mix until smooth.
  4. Slowly add the dry flour mixture to the wet butter mixture and stir until a soft dough forms.
  5. Scoop rounded tablespoons of dough onto the prepared baking sheet and use the back of a spoon or your fingers to gently flatten them into cookie shapes.
