Quick Plant-Based Chicken Stew

Ready, set, enjoy! This recipe only takes 20 minutes to make. The result is comforting, warm, delicious and HEALTHY!

Ingredients

  • 3 cans CHIK’N in Broth
  • 3 cups vegetable broth
  • 1/4 cup instant potato flakes
  • 1 tsp rubbed sage
  • 1 tsp onion powder
  • 1 tsp season salt
  • 1/2 tsp herb-blend all purpose seasoning
  • 1/8 tsp black pepper
  • 1 1/2 cups frozen peas
  • 1 can sliced carrots (14-oz)
  • 2 cans whole new potatoes (15-oz), drained and cut into halves or quarters
  • 1/2 cup oat milk

Directions

  1. In a large saucepan, add vegetable broth, all seasonings and bring to a boil.
  2. Meanwhile, drain cans of potatoes and carrots.
  3. Add potato flakes to the saucepan, and whisk to combine.
  4. Add in all remaining ingredients: vegetables, CHIK’N (Do not drain) – except the oat milk.
  5. Cook for 5 min over medium heat, then reduce to a simmer. Add in oat milk, and continue to simmer for 6 min.
