Pumpkin Oatmeal Squares

This healthy, vegan treat can be enjoyed as a snack or during breakfast. It’s easy to make and it’s delicious hot or cold. Top it with fruits, honey or yogurt or simply enjoy it on its own!

Makes 4 squares.

Ingredients

  • 2 tablespoons neat egg mix
  • 4 tablespoons water
  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 cup pumpkin purée
  • 1.5 cups plant-based milk
  • ¼ cup honey
  • Optional: chocolate chips, raisins, nuts

Directions

  1. Preheat oven to 375F°. Grease a 8×8 inch baking dish (you can also lay parchment paper in the dish).
  2. In a small bowl, combine neat egg powder and water. Mix well.
  3. In a large bowl, combine oats, pumpkin spice, baking powder and salt.
  4. Add pumpkin puree, milk and honey. Mix well.
  5. Add the prepared neat eggs and combine.
  6. Spread preparation into baking dish and bake for 30-35 min.
  7. Allow to cool for at least 5 minutes and enjoy!
