Tomato Taco

Easy, quick and delicious way to add plant-protein to a tomato to make a healthy meal.

Makes 2 servings.

Ingredients

  • 1 pouch of Loma Linda Taco Filling
  • 2 large, ripe beefsteak tomatoes
  • Grated vegan cheese
  • Vegan sour cream

Directions

  1. Flip over tomatoes so they’re stem-side down and slice to make 6 wedges, being careful not to cut all the way through. Carefully spread open wedges.
  2. Between each wedge, add Loma Linda Taco Filling with a spoon.
  3. Top with grated cheese.
  4. Bake at 350°F (177°C) for 10-15 min.
  5. Top with sour cream and enjoy!
