Tuno Tacos with Pomegranate Salsa

Take taco night to the next level with these festive and colorful plant-based fishless tacos, featuring Loma Linda Lemon Pepper Tuno and pomegranate salsa!  

Makes 4 Servings.

Ingredients

Salsa:

  • 1 ¼ cup pomegranate seeds
  • Juice from 2 limes
  • 2 tablespoons fresh chopped cilantro
  • ½ medium onion, diced
  • ½ -1 jalapeno pepper, finely chopped (add according to desired spiciness)
  • Salt & pepper to taste

 

Tuno Taco Filling:

  • 2 cans Loma Linda Lemon Pepper Tuno
  • Juice of 1 lime

 

For serving:

  • 8 small soft taco shells/tortillas
  • 1 cup plant-based cheese
  • Fresh chopped cilantro for garnish

Directions

  1. First, combine the salsa ingredients and set aside.
  2. In a separate bowl, combine the juice of one lime with the TUNO.
  3. Microwave the TUNO for 60 seconds, until warmed.
  4. Assemble the tacos by placing a spoonful of the TUNO on each tortilla, top with plant-based cheese, cilantro, and a generous spoonful of the pomegranate salsa. 
  5. Enjoy!
