Pasta Primavera with TUNO Lemon Pepper
Makes 2 servings.
Ingredients
2 cans
Loma Linda Lemon Pepper TUNO
1kg penne pasta
2 cloves garlic, minced
125ml olive oil
125g chopped broccoli
1 carrot, sliced
½ bell pepper, diced
¼ red onion, diced
1 small courgette, sliced
1 small yellow squash, sliced
3g oregano
3g thyme
Salt & pepper to taste
Directions
Cook pasta according to package directions and set aside.
In a skillet over medium heat, sauté garlic for 1 minute.
Add onion and carrot and cook for 1 minute.
Then add the other vegetables and cook until all vegetables are cooked through.
Add the TUNO and cook until warmed, about 2 minutes.
Sprinkle on the oregano, thyme, salt, and pepper.
Toss in the cooked pasta.
