Pasta Primavera with TUNO Lemon Pepper

Pasta Primavera with Lemon Pepper TUNO

Makes 2 servings.

Ingredients

  • 2 cans Loma Linda Lemon Pepper TUNO
  • 1kg penne pasta
  • 2 cloves garlic, minced
  • 125ml olive oil
  • 125g chopped broccoli
  • 1 carrot, sliced
  • ½ bell pepper, diced
  • ¼ red onion, diced
  • 1 small courgette, sliced
  • 1 small yellow squash, sliced
  • 3g oregano
  • 3g thyme
  • Salt & pepper to taste

Directions

  1. Cook pasta according to package directions and set aside.
  2. In a skillet over medium heat, sauté garlic for 1 minute.
  3. Add onion and carrot and cook for 1 minute.
  4. Then add the other vegetables and cook until all vegetables are cooked through.  
  5. Add the TUNO and cook until warmed, about 2 minutes.
  6. Sprinkle on the oregano, thyme, salt, and pepper.  
  7. Toss in the cooked pasta.
