Ingredients

  • 1 can (10 oz) Loma Linda CHIK’N in Broth, drained and shredded
  • 4 oz rice noodles (about half a package)
  • 1 tablespoon vegetable oil
  • 1 medium carrot, julienned
  • 1 red bell pepper, sliced into thin strips
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon tamarind paste
  • 1 tablespoon maple syrup or agave nectar
  • 1 tablespoon lime juice
  • 1/4 cup roasted peanuts, chopped
  • Fresh cilantro, chopped, for garnish
  • Optional: 1-2 green onions, sliced, for garnish
  • Optional: Lime wedges, for serving

Directions

  1. Prepare the noodles: Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Cook the Vegetables: Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the julienned carrot and sliced red bell pepper. Cook for 3-4 minutes until they start to soften.
  3. Add the CHIK’N: Stir in the shredded CHIK’N and cook for an additional 2-3 minutes until heated through.
  4. Prepare the Sauce: In a small bowl, whisk together the soy sauce, tamarind paste, maple syrup (or agave nectar), and lime juice.
  5. Combine Everything: Add the cooked rice noodles to the skillet with the vegetables and CHIK’N. Pour the sauce over the mixture and toss everything together until well coated and heated through, about 2-3 minutes.
  6. Serve: Divide the Pad Thai between two plates or bowls. Garnish with chopped roasted peanuts, fresh cilantro, and optional sliced green onions. Serve with lime wedges on the side for an extra zesty kick.
