Loma Linda Sloppy Joe Spaghetti Bake

This spaghetti bake is one of the simplest ways of getting a delicious and nutritious meal on the table. This recipe replaces angel hair pasta with squash spaghetti and a generous helping of Sloppy Joe. Enjoy the fresh and comforting flavors of squash and Sloppy Joe while keeping it gluten-free, healthy, and completely vegan.

Ingredients

  • 1 can Loma Linda Sloppy Joe
  • 1 medium spaghetti squash (2-3 pounds)
  • Salt & pepper to taste
  • 1/2 cup vegan cheese
  • Coriander, for garnishing

Directions

  1. Preheat the oven to 400°F.
  2. Cut the squash in half (vertically) and remove the seeds.
  3. Sprinkle a little salt on the squash and place the cut side down on a baking dish. Bake for 20-25 minutes or until it is easily pierced with a fork.
  4. Remove from the oven and let it cool down for about 10 minutes.
  5. When cool to handle, use a fork to separate the flesh into pasta-like strands.
  6. Add salt and pepper to squash. Gently mix.
  7. Spread the Sloppy Joe on top of the spaghetti and sprinkle vegan cheese.
  8. Bake for another 7-10 minutes or till the cheese melts. Sprinkle coriander on top and serve immediately.
