Frosted Double Chocolate Cookies made vegan with The neat Egg

Directions

1. Preheat oven to 375F°.
2. Prepare 1 neat egg according to the instructions on the packaging.
3. In a separate bowl, microwave 1 cup chocolate with ¼ cup margarine until completely melted. Stir to combine.
4. In a third bowl, combine flour, baking soda and salt in a small bowl.
5. Beat ¼ cup margarine, brown sugar, granulated sugar and vanilla extract in a large mixing bowl until creamy. Pour in the neat egg and plant-based milk. Beat until combined. Beat in chocolate and melted margarine until smooth.
6. Form 1 inch balls with your hands and place on baking sheet.
7. Bake for 8 min, and place on a wire rack and let cool.
8. Microwave remaining ½ cup chocolate and margarine until melted. Add powdered sugar and plant based milk. Whisk until smooth.
9. Frost chocolate cookies with a spoon or with a pastry bag for a cleaner result.
