Mushroom Stroganoff

This dish is vegan, delicious and SO COMFORTING! Stroganoff usually calls for beef, but we made our version with neat Meat crumbles. They made for the perfect beef replacement and a meal full of delicious flavors!

Makes 4 servings.

Ingredients

  • 1 pouch neat Original mix
  • 1 tbsp canola oil
  • 1 onion, chopped
  • 1 celery stalk, finely chopped
  • 2 medium carrots, finely chopped
  • 1 garlic clove, chopped
  • 1 cup mushrooms, sliced
  • Β½ cup vegan sour cream
  • Salt, pepper, to taste.
  • Vegan tagliatelle pasta, 4 servings
  • Chives, chopped

Directions

  1. Prepare 1 full pouch of neat Original using the crumbles recipe on the packaging.
  2. In a nonstick pan, add canola oil and garlic. Cook over medium heat.
  3. Add carrots, mushrooms, salt, pepper, and cover. Cook for 5 min, stir often to avoid sticking.
  4. When mushrooms are golden and slightly crispy, lower the heat. Add vegan sour cream and neat crumbles. Cover.
  5. Meanwhile, prepare 4 servings of vegan tagliatelle according to packaging direction.
  6. When cooked, pour pasta into 4 bowls. Add stroganoff and top with fresh chives! Enjoy!
