Vegan and Egg-Free Protein Bars with Peanut Butter and Chocolate Drizzle

Ingredients

For the Protein Bars:

  • 2 cups rolled oats
  • 1 cup plant-based protein powder
  • 1 cup peanut butter
  • 1/2 cup maple syrup or agave nectar
  • 1/2 cup almond milk
  • 1 The Neat Egg (prepared according to package instructions)
  • 1 teaspoon vanilla extract
  • A pinch of salt

 For the Peanut Butter and Chocolate Drizzle:

  • 1/4 cup peanut butter
  • 1/4 cup vegan chocolate chips

Directions

For the Protein Bars:

  • Preheat your oven to 350°F (175°C) and line a square baking dish with parchment paper.
  • In a large mixing bowl, combine the rolled oats and plant-based protein powder.
  • In a separate microwave-safe bowl, melt the peanut butter until it’s smooth and liquid. This should take about 30 seconds to 1 minute in the microwave.
  • Add the melted peanut butter, maple syrup or agave nectar, almond milk, The Neat Egg, vanilla extract, and a pinch of salt to the dry ingredients. Mix until well combined.
  • Press the mixture evenly into the prepared baking dish.
  • Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  • Allow the bars to cool completely in the baking dish before moving to the next step.

For the Peanut Butter and Chocolate Drizzle:

  1. In a small microwave-safe bowl, melt the peanut butter until it’s smooth.
  2. In another small bowl, melt the vegan chocolate chips in the microwave in 20-second intervals, stirring between each interval until fully melted.

Assembling:

  1. Once the protein bars are completely cooled, drizzle the melted peanut butter and chocolate over the top.
  2. Place the dish in the refrigerator for about 30 minutes to allow the drizzle to set.
  3. Once set, use the parchment paper to lift the protein bars out of the dish and onto a cutting board.
  4. Cut into desired-sized bars.
  5. Store in an airtight container in the refrigerator.
