Coffee Flavored Cake with Frosting

Ingredients

For the cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Kaffree Roma coffee substitute
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 1/3 cup vegetable oil
  • 1/2 cup unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract

 

For the frosting:

  • 1/2 cup vegan butter, at room temperature
  • 2 cups powdered sugar
  • 2-3 tbsp Kaffree Roma coffee substitute
  • 1 tsp vanilla extract

Directions

  1. Preheat your oven to 350°F (180°C). Grease a loaf pan and set aside.
  2. In a mixing bowl, whisk together the flour, Kaffree Roma, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix together the applesauce, maple syrup, vegetable oil, almond milk, apple cider vinegar, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to over mix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake the cake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Remove the cake from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  8. While the cake is cooling, make the frosting. In a large mixing bowl, beat the vegan butter until smooth and creamy.
  9. Gradually add the powdered sugar, 1/2 cup at a time, beating well after each addition.
  10. Add the Kaffree Roma and vanilla extract, and beat until the frosting is light and fluffy.
  11. Once the cake has cooled completely, spread the Kaffree Roma frosting on top of the cake using a spatula or piping bag.
