Voilà! Egg-free crepes…made possible by the neat egg! Brunch is Served!

Makes 4 Servings

Ingredients

  • ½ cup plant-based milk
  • 1 tablespoon The neat Egg mix made according to packaging instrucitons
  • ½ cup water
  • ¼ cup plant-based butter, melted
  • 1 tablespoon organic sugar
  • 2 tablespoons high-quality maple syrup
  • 1 cup flour
  • Pinch of salt
  • Nonstick spray

Directions

  1. Heat a griddle, crepe maker, or a large non-stick skillet over medium heat.
  2. Whisk together all ingredients until thoroughly combined.
  3. Cover and chill for 1-2 hours.
  4. Spray the cooking surface with non-stick spray.
  5. Pour about ¼ cup of the batter onto the surface.
  6. Using a crepe spreader, form a thin, even circle.
  7. Cook until golden and then flip to cook the other side.
  8. Continue with the remaining batter.  Enjoy!
