Egg-Free Donut Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup plant-based milk (such as almond or soy milk)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons The Neat Egg (mixed with 4 tablespoons water, according to package instructions)
  • Oil for frying

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons plant-based milk
  • 1/2 teaspoon vanilla extract

Directions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, mix together the plant-based milk, apple cider vinegar, vegetable oil, vanilla extract, and prepared Neat Egg mixture until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over mix; the dough should be thick and slightly sticky.
  4. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Roll out the dough to about 1/2 inch thickness.
  5. Use a donut cutter or two differently sized round cookie cutters to cut out donuts and donut holes from the dough. Gather and re-roll any scraps of dough as needed.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the donuts to the hot oil, frying a few at a time, making sure not to overcrowd the pan. Fry for 1-2 minutes on each side, or until golden brown and cooked through.
  7. Remove the donuts from the oil using a slotted spoon and place them on a wire rack lined with paper towels to drain and cool.
  8. In a small bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until smooth to make the glaze.
  9. Dip each cooled donut into the glaze, coating it completely. Place the glazed donuts back on the wire rack to allow the glaze to set.
