Eggless Waffles with the neat egg

Eggless waffles that are still fluffy on the inside and golden on the outside, all 100% vegan and plant-based, thanks to The neat egg! Get creative and top with fresh fruit, whipped cream, or chocolate chips to make these waffles your new favorite go-to breakfast.

SERVINGS: Makes 4 large waffles.

Ingredients

  • 1 ½ cup plant-based milk
  • 2 teaspoons apple cider vinegar
  • 2 cups flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 tablespoon maple syrup
  • ¼ cup plant-based butter, melted
  • 1 neat egg prepared according to package instructions
  • 1 teaspoon vanilla extract
  • Toppings of choice like fresh fruit, whipped cream, chocolate chips

Directions

  1. Heat a waffle maker.  Spray with a non-stick spray.
  2. In a glass measuring cup or bowl, mix the milk, vanilla, and vinegar together and let sit for 5 minutes.
  3. In a mixing bowl, sift the flour together with the baking powder and salt. Add the syrup, butter, neat egg, and milk mixture.  Stir just until combined, do not overmix.
  4. Pour one quarter of the mix into the hot, greased waffle iron, for each of the 4 waffles.  Cook until the steam has stopped or until the waffle maker indicates the waffles are ready.  Serve the waffles with the toppings and enjoy while still fluffy and warm!
