Loma Linda Southwest Acorn Squash Wellness Bowl

The picture of health is this colorful, flavor-packed bowl of wellness!  Fresh herbs, kale and mushrooms add antioxidants to this hearty, healthful dish featuring Loma Linda Southwest Bowl.

Ingredients

  • 2 acorn squash, halved and seeds removed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 2 teaspoons cooking oil of choice
  • 4 oz. shiitake mushrooms
  • 1 ½ cups fresh kale
  • 1 clove fresh garlic, minced
  • 1 teaspoon thyme, chopped
  • 1 teaspoon oregano, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 packs Loma Linda Southwest Bowl
  • Additional herbs for garnish (optional)

Directions

  1. Preheat the oven to 425 degrees.
  2. Prepare a baking sheet with parchment paper.
  3. Brush each half of the squash with olive oil and sprinkle with salt.
  4. Place cut side down on the parchment paper.
  5. Bake for 25 minutes, set aside.
  6. In a skillet, heat the cooking oil over medium heat.
  7. Add the shiitake mushrooms and kale and cook for 3 minutes.
  8. Add the 2 packs of Loma Linda Southwest Bowl, heat for 2 minutes, while stirring to combine.  Add the fresh garlic and herbs.
  9. Spoon the mushroom mixture evenly into each of the acorn squash halves.
  10. Return to the oven, covered, for 10 minutes.
  11. Remove from the oven, top with a garnish of fresh herbs, if desired.
  12. Serve while still warm.
