Loma Linda Taco Filling Shepherd’s Pie

Bake your very own delicious shepherd’s pie using Loma Linda Taco Filling as a meat alternative, combining it with peas, carrots, onion, and corn topped with a mashed potato crust and spiced with paprika.

Ingredients

  • 1 pouch of Loma Linda Taco Filling
  • 1 onion, finely chopped
  • 2 cups frozen peas and carrots
  • 1 cup frozen corn kernels
  • 3 cups mashed potatoes
  • 1/2 tsp paprika

Directions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine chorizo, onion, peas, carrots, and corn. Then move to an 11″ x 7″ x 2″ baking dish.
  3. Spread potatoes over top and sprinkle with paprika.
  4. Bake in the oven for 40 minutes or until heated through and the top is golden.
