Mexican Pizza with Plant-Based Taco Filling
Ingredients
1 pouch of
Loma Linda Taco Filling
1 cup vegetable oil
4 flour tortillas (taco size)
15 ounce can refried beans
10 ounce can enchilada sauce
2 cups shredded Mexican cheese blend
Toppings:
Diced tomatoes
Sliced green onion
Sliced olives
Sliced green onions
Directions
Preheat oven to 400°.
In a large skillet, heat oil over medium heat.
Add tortillas (one at a time) and cook for 3-4 minutes until crisp. Flip frequently to avoid burning.
Continue with the rest of the tortillas and set aside.
Microwave the refried beans in a microwavable bowl, until hot. Then mash with a fork until smooth.
Spread a layer of beans on each tortillas.
Then top with
Loma Linda Taco filling
.
Place a tortilla on top.
Spread enchilada sauce all over the top tortilla.
Then add shredded cheese and any of your favorite pizza toppings.
Place the pizzas on a large non-stick baking sheet and bake for about 8-10 minutes until cheese is melted.
