Mexican Pizza with Plant-Based Taco Filling

Ingredients

  • 1 pouch of Loma Linda Taco Filling
  • 1 cup vegetable oil
  • 4 flour tortillas (taco size)
  • 15 ounce can refried beans
  • 10 ounce can enchilada sauce
  • 2 cups shredded Mexican cheese blend

Toppings:

  • Diced tomatoes
  • Sliced green onion
  • Sliced olives
  • Sliced green onions

Directions

  1. Preheat oven to 400°.
  2. In a large skillet, heat oil over medium heat.
  3. Add tortillas (one at a time) and cook for 3-4 minutes until crisp. Flip frequently to avoid burning.
  4. Continue with the rest of the tortillas and set aside.
  5. Microwave the refried beans in a microwavable bowl, until hot. Then mash with a fork until smooth.
  6. Spread a layer of beans on each tortillas.
  7. Then top with Loma Linda Taco filling.
  8. Place a tortilla on top.
  9. Spread enchilada sauce all over the top tortilla.
  10. Then add shredded cheese and any of your favorite pizza toppings.
  11. Place the pizzas on a large non-stick baking sheet and bake for about 8-10 minutes until cheese is melted.
