Vegan Cake Pops

Throwing a party can be stressful, especially making vegan desserts! Well good news, here is a recipe to make the most fun and cute vegan cake pops! Nobody will ever know they are egg and dairy free! Enjoy!

Ingredients

Simple Cake:

  • 1 tablespoon neat egg powder
  • 2 tablespoon water
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 tablespoon vegan butter, softened
  • ½ cup plant-based milk of your choice
  • 3 neat eggs

Frosting:

  • 1 block vegan cream cheese
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar

Coating:

  • Frosting (see above)
  • 1 tablespoon coconut oil
  • 1 cup vegan chocolate chips
  • Decorative sprinkles, chopped peanuts or hazelnuts

Directions

Simple Cake:

  1. Preheat oven to 400°F.
  2. Prepare the neat egg: in a small bowl, combine neat egg powder and water.
  3. In a large bowl, combine melted vegan butter and sugar. Add flour, baking soda, baking powder and salt. Incorporate plant-based milk and whisk until well combined. Then, add the neat egg. Batter must be smooth. You can add extra milk if too dry.
  4. Spread batter into a prepared cake pan and bake for 30 to 35 min. Use a knife as a tester: the blade must come out clean when inserted in the center.
  5. When baked, remove cake from the oven and allow to cool down. When completely cooled, cut the cake into pieces, and add to a large bowl. Use a fork or your hands to turn into crumbs.

Frosting:

  1. In a bowl, whisk vegan cream cheese, vanilla extract, and powdered sugar together.
  2. Add frosting to the cake crumbles and mix with a large spoon.
  3. The batter must have a spreadable consistency. If too dry, add plant-based milk.

Coating:

  1. White coating: you can use frosting (if you have some left)
  2. Chocolate coating: melt chocolate and mix with coconut oil, until smooth.

Cake Pops:

  1. Using a cookie dough dispenser or your hands, shape 1in balls with the cake mixture. Place on a plate or on a cookie sheet and refrigerate for 1 hour.
  2. Insert lollipop or wood sticks in the center or each ball.
  3. Hold balls over a plate and drop sprinkles on coating. Place cake pop sticks into a Styrofoam block or poke holes in a box and place sticks in box holes.
  4. Repeat this process with each ball.
  5. Allow coating to set for 30 min and enjoy!
