Vegan Gingerbread Cookies

‘Tis the season!

These delicious vegan gingerbread cookies are perfect for the holiday season and can be kept up to 10 days (one of the many advantages of egg-free baking!) Make a large batch for your family to enjoy by the fireplace!

Ingredients

  • 1 neat egg (prepared as shown on packaging)
  • ½ cup plant-based milk
  • 2/3 cup margarine, softened
  • 1/2 cup dark brown sugar
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • Optional: vegan royal icing

Directions

  1. In a small bowl, prepare 1 neat egg, according to packaging direction. Set aside.
  2. In a large bowl, beat margarine and sugar on medium speed.
  3. Then, add molasses and vanilla extract. Beat until creamy.
  4. Add the neat egg and plant-based milk. Beat on high speed until well combined.
  5. In a separate bowl, mix baking soda, all-purpose flour, salt, ground ginger, ground cinnamon, ground all spices, ground cloves.
  6. Slowly mix dry ingredients with wet ingredient until combined. The dough must form a ball. If too dry, add more plant-based milk.
  7. Divide dough into 4 equal parts. Sprinkle flour on countertop and roll out until ¼ in thick. Using cookie cutters that are similar in size, cut out cookies.
  8. Place each cookie on parchment paper lined baking sheet. Repeat the process.
  9. Bake cookies from 9 to 10 min. Allow to cool down on the cookie sheet. Once completely cooked and cooled, decorate as desired.
