Vegan Pumpkin Waffles

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup canned pumpkin puree
  • 1 1/2 cups plant-based milk (such as almond, soy, or oat)
  • 2 tablespoons vegetable oil
  • 1 tablespoon The neat Egg (mixed according to package instructions)
  • 1 teaspoon vanilla extract
  • Cooking spray or additional vegetable oil for greasing the waffle iron

Directions

  1. Preheat Your Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.
  2. Prepare The neat Egg: Mix The neat Egg powder with water according to the package instructions. Typically, 1 tablespoon of The Neat Egg mixed with 2 tablespoons of water is equivalent to one egg.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Mix Wet Ingredients: In another bowl, combine the pumpkin puree, plant-based milk, vegetable oil, prepared Neat Egg mixture, and vanilla extract. Mix until well combined.
  5. Combine Wet and Dry Mixtures: Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to over mix; a few lumps are okay.
  6. Grease the Waffle Iron: Lightly grease the waffle iron with cooking spray or a small amount of vegetable oil.
  7. Cook the Waffles: Pour an appropriate amount of the waffle batter onto the preheated waffle iron, using a ladle or measuring cup, based on the size of your waffle iron. Close the waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.
  8. Keep Warm: Place the cooked waffles on a wire rack set over a baking sheet in a warm oven (around 200°F or 93°C) to keep them warm while you cook the remaining waffles.
  9. Serve: Serve your vegan pumpkin waffles warm with your choice of toppings, such as maple syrup, vegan butter, chopped nuts, or fresh fruit.
