Vegan Upside Down Peach Cake

Ingredients

For the caramelized peach topping:

  • 3 tablespoons vegan butter
  • 1/2 cup brown sugar
  • 4-5 ripe peaches, peeled, pitted, and sliced

For the cake batter:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened plant-based milk (such as almond or soy milk)
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon juice
  • 2 neat Eggs (prepared according to package instructions)

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a small saucepan, melt the vegan butter over medium heat. Add the brown sugar and stir until dissolved and bubbling. Pour the caramelized mixture into the greased cake pan, spreading it evenly to cover the bottom.
  3. Arrange the sliced peaches on top of the caramelized mixture in a single layer, covering the entire bottom of the pan.
  4. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In a separate bowl, combine the plant-based milk, granulated sugar, vegetable oil, vanilla extract, lemon juice, and prepared Neat Egg. Whisk until well combined.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  7. Carefully pour the cake batter over the peaches in the cake pan, spreading it evenly to cover the peaches.
  8. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for about 10 minutes.
  10. Place a serving plate upside down on top of the cake pan. Using oven mitts or towels, carefully invert the cake pan to release the cake onto the plate. Tap the bottom of the pan to ensure the cake is fully released.
