Vegan Tater Tot Taco Casserole Appetizer Recipe

This Vegan Tater Tot Taco Casserole recipe is the perfect vegan option to add to your game day party spread. Made with Neat Meat Southwest Mix, black beans, vegan cheddar, and topped off with fresh diced tomatoes, sliced green pepper, cilantro, avocado, and vegan sour cream, it’s a hearty and flavorful dish that’s sure to please even the meatiest of eaters.

Ingredients

  • 1 pouch of neat Meat Southwest Mix
  • 1/2 cup cooked black beans
  • 1 package of frozen tater tots
  • 1 cup of vegan cheddar cheese
  • 1/2 diced tomatoes
  • 1/2 sliced green pepper
  • 1/4 cup cilantro, chopped
  • 1 avocado, sliced
  • Vegan sour cream

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish with cooking spray.
  2. Spread a layer of tater tots on the bottom of the prepared baking dish.
  3. Prepare neat meat crumbles according to package instructions.
  4. Mix in the cooked black beans to the neat meat crumbles.
  5. Spread the mixture over the tater tots.
  6. Sprinkle the diced tomatoes, sliced green pepper and vegan cheddar cheese over the top of the neat meat mixture.
  7. Bake for 25-30 minutes or until the cheese is melted and the tater tots are crispy.
  8. Remove from the oven and let it cool for a few minutes.
  9. Garnish with cilantro, avocado slices and a dollop of vegan sour cream.
